Taking advantage of the munchies also helps when trying to sober up, eating a decent amount of food will be sure to bring you back down. I also find food just generally sorts your head out when your are too stoned, remember your body needs fuel at all times especially when high.
If you want to stop being stoned because of paranoia or anxiety then just close your eyes and breathe, its not going to go away in an instant but just remind yourself you will not be high forever and you can get through it.
